Finally got the balance right. It was a struggle to get the balance right … tried all sorts of variants before this one worked.

Recipe

1/2 cup of water

20ml of vegetable oil

45 ml of milk

teaspoon of salt

tablespoon of sugar

2 and 1/4 cups of bread flour

teaspoon of instant yeast

The flour was 100% unmixed. Overall, a pleasing result. Not burned, nice texture. Will try reducing the sugar to half tablespoon to see if I can control the browning. And I may try using butter, not vegetable oil.

Pretty nice.

Cut out the milk powder, used fresh milk instead, reduced the sugar by 1/3 and oiled the pan. That combined with the new flour was enough to get a decent loaf of home-made bread!
