One of the conundrums of recent medical science especially where I come from is the fact that despite much information, education and training, rates of heart disease in Scotland haven’t changed significantly despite a lot of effort at changing fat consumption. Perhaps the culprit isn’t fat, but the other dietary input … carbs.
LA Times article of 2010 examines this phenomenon: A reversal on carbs:
But a growing number of top nutritional scientists blame excessive carbohydrates — not fat — for America’s ills. They say cutting carbohydrates is the key to reversing obesity, heart disease, Type 2 diabetes and hypertension.
